Quick and Easy Soybean Patties Recipe at Home
Know your roots before turning into a tree-
Soybean, also known as, soya bean (species name, Glycine max) is a textured
vegetable protein which was invented by the agricultural commodities and food
processing company Archer Daniels Midland in the 1960’s. The company
owned the TVP name as a registered trademark. It had developed a textured soy
protein isolate made with an extruder in the shape of rods or tubes. The isolate
was produced in a small pilot plant and sold for use in chili powder but unfortunately
the product could not be commercially successful. By the year 1968, TVP was
widely used in a variety of food products and consumption majorly increased
after 1971 when TVP was approved for use in school lunch programs. By 1980,
similar products were being produced by rival companies in America but Archer
Daniels Midland remained the leader in TVP production.

Method of preparation of Soybean patties-
Step I:
Soak the soybean chunks overnight to make it soft. If not overnight, soak
in warm water at least 1-2 hours before the final shot.
Step II:
Take a heavy base pan.
Pour water and add soaked chunks in it. Bring it to boil for about 15-20 min.
Step III:
Squeeze out the extra water from the chunks. Put the chunks in a blender
and combine them well into fine mixture. Add water as per requirement to check
the consistency while blending.
Step IV:
Take the mixture in a separate bowl and add all other ingredients
mentioned above except breadcrumbs. Combine them well to form a thick mixture.
Step V:
The mixture is now
ready to take shape of patties. Take small portions of the mixture and
transform into patties of desired shapes and sizes.
Now take the patties
and roll them in the breadcrumbs and coat them evenly.
Step VII:
Take the coated patties
and cook them properly. You may either bake them in an oven or deep/shallow fry
them as per your preference. Deep frying will undoubtedly make the patties
crispier and crunchier but it will contain more calories comparatively.
For shallow fry, take
a non-sticky tawa(flat pan) and spread oil over it. Allow the oil to heat and place the
patties over it. Cook on medium to low flame. Roast the patties from both the
sides until they turn golden brown.
Step IX:
To bake them, preheat
the oven at 350 degree and cook until the patties turn golden brown.
Step X:
The patties are now ready
to be served. You may use it to prepare burgers, rolls and sandwiches or may
even consume them as a solo snack. Serve them hot with either salad, chips,
fries or mayo sauce.
Some Useful Tips:
To enjoy the patties
for a longer time, you may refrigerate the partially baked patties in an air
tight container. Deep or shallow fry the patties whenever you wish to consume
them.
Tastes best when spread
with love and served in sandwiches, rolls and burgers. Add a layer of either cheese
spread or mayonnaise in the sandwich and sprinkle some oregano, black pepper
and chili flakes to enhance the flavor.
Health Benefits of
Soybean:
Dried textured
vegetable protein is 7% water, 52% protein, 34% carbohydrates and 1% fats. Each
100 grams of Soybean chunks provide 327 k-cal of food energy and is a rich
source of several vitamins, including folate and dietary minerals,
especially phosphorous, magnesium and iron.
Use spinach or other
green leafy vegetables to enhance the nutritional value while making the soybean
patties. This is an alternative for using boiled potatoes. Those who are
fitness conscious and do not want to consume potatoes, may use these green
leafy veggies finely grind together. Potatoes act as a binding agent in
making the patties. When green veggies are used as an alternative, use all
purpose flour to bind them together. Also, add corn flour to add crisp to the soy
patties.
